Ingredients

2 pork tenderloins, each about 3/4 lb., trimmed of excess fat
1 tbs. peanut oil
Salt and freshly ground pepper, to taste
2 tbs. peanut oil
1 tbs. soy sauce
Juice of 1 lime
2 tsp. sherry vinegar
1 tsp. peeled and minced fresh ginger
1/8 tsp. sugar
2 or 3 drops sriracha or other hot sauce
1 lb. fresh chinese egg noodles
1 red bell pepper, seeded and thinly sliced
1 small red serrano chili, seeded and thinly sliced crosswise (optional)
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh cilantro
