Olive Oil Poached Salmon with Chilled Beet and Red Onion Salad

Ingredients

1 cup of chopped, cooked beets (i used salt-roasted ones)
1/2 cup chopped red onion
1/4 cup chopped olives
4 pickled garlic cloves, sliced
2 tablespoons capers
1/4 cup chopped parsley
2 tablespoon red wine vinegar
Salt and pepper
2 cups olive oil (you can substitute one cup with a garlic infused oil or a lemon infused oil if you have it on hand.)
4 (6-ounce) skinned salmon fillets
Zest of one lemon, removed in long swaths using a vegetable peeler
