Ingredients

1/4 teaspoon salt
1 tablespoon finely ground espresso
1/2 cup natural cocoa powder - not dutch processed
2 tablespoons ancho chile powder
2 teaspoons baking powder
1 pound 70% bittersweet chocolate, chopped into small pieces
1 1/4 sticks (10 tablespoons) unsalted butter, softened
1 1/2 cups packed dark brown sugar
1/2 cup white sugar plus 1/2 cup for coating the cookies
4 large eggs (room temperature)
1 tablespoon mezcal (optional)
1/4 cup cocoa nibs (see testing notes)
