Ingredients

1 tablespoon vegetable oil
2 teaspoons cumin seeds
1 red onion, cut in half and thinly sliced
2 cloves garlic, minced
1 tablespoon minced fresh ginger
1 1/2 teaspoons ground coriander
1 teaspoon turmeric
Salt and pepper
2 14-oz. cans low-sodium vegetable broth
2 medium red potatoes, cut into 1/4-inch dice (about 2 cups)
2 medium carrots, sliced (about 3/4 cup)
1/2 small head cauliflower, cut into small florets (about 4 cups)
1 15-oz. can chickpeas, drained and rinsed
1/2 cup light unsweetened coconut milk
Cooked rice and chopped fresh cilantro, optional
