Ingredients

1 large onion finely chopped
1 heaped tablespoon of chopped fresh herbs (whatever is available e.g. sage, parsley, thyme, basil, rosemary)
2 peeled, cored and finely diced eating apples
Grated zest of 1 lemon (save the juice as it may be needed)
6 heaped tablespoons fresh white breadcrumbs
2lb (900g) good quality pork sausage meat or finely minced pure pork (honestly, i use klik, but to each their own)
Salt & freshly milled black pepper
