1 teaspoon whole cloves
1 teaspoon allspice berries
3/4 teaspoon fine sea salt
1/2 cup dried tart cherries, coarsely chopped (optional)
1/4 cup diced candied ginger (optional)
3 cups sugar
1 1/2 tablespoons pulp free lemon juice
1/2 cup water
1 tablespoon vanilla extract
