Ingredients

1/2 cup brown rice flour
1/2 cup rice flour (white rice flour)
1/4 cup tapioca flour (also called tapioca starch)
1/3 cup potato starch (i use sweet rice flour here)
1/2 cup brown sugar (or organic sugar, oh my we love these muffins with it!)
2 teaspoons gluten free baking powder
1 teaspoon baking soda
1 teaspoon guar gum (may substitute xanthan gum ˜ corn derived)
1/4 teaspoon salt
1/3 cup canola oil
1 large egg (or use 2 ener-g egg replacer eggs)
